I made this salad a few weeks ago and have been dreaming of it since. I hosted at home facials and we had this salad with mini bagels and champagne. The perfect light girl’s brunch. Evans was skeptical of this salad but he ended up loving it. The flavors are just so good together. Obviously the key is getting cantaloupe and watermelon that are perfectly ripe, that is key for flavor. The tangy feta, herbs, light vinaigrette and pistachios complete the salad perfectly! It is a wonderful Summer Salad!
This recipe came from the new Half Baked Harvest Cookbook and if you don’t have it trust me you need it! She is a genius in the kitchen, I love every single recipe she makes. I highly recommend all 3 of her cookbooks!
S U M M E R M E L O N S A L A D
1 small cantaloupe chopped into bite size pieces
1 small seedless watermelon chopped into bite size pieces
3 baby cucumbers sliced
1/2 cup fresh basil sliced
1/2 cup olive oil
juice of 1 lime
2 tablespoons honey
2 tablespoons mint chopped
2 tablespoons chopped fresh chives
1/2 teaspoon red pepper flakes
salt and pepper
8 ounces crumbled feta
1/4 cup chopped pistachios
In a bowl combine the melon, cucumber, and basil
Whisk together the olive oil, lime juice, honey, mint and chives. Season with salt and pepper and red pepper flakes.
Drizzle half thew vinaigrette over the salad and toss. Add in feta and pistachios and drizzle the rest of the vinaigrette. Garnish with more basil and mint if desired!
