
There is a fairly new restaurant here called Basic Kitchen that I love. It is right up my alley with a menu filled with healthy eats. I highly recommend if you are visiting- they have a beet margarita that is out of this world good. The interiors are bright and sunny and the entire situation just makes me happy. I have several favorites on the menu but the Basic Bowl is one of my all time favorites so I wanted to try and recreate it. It is a dream veggie bowl filled with so many great flavors. You just feel good after eating this! I took a few shortcuts with store bought items (like curry chickpeas and dressing) and I will share a picture below if you want to buy them. They make this a super easy meal to whip together.
You can always make this ahead and just store in separate containers and reheat when ready, but this should make enough for 2-4 bowls. Enjoy!

B A S I C B O W L
1 cup cooked red quinoa
2 sweet potato
2 heads broccoli
1 head lacindo kale
curry chickpeas
green goddess dressing
watermelon radish
Cook quinoa according to box.
Wrap sweet potato in foil and bake at 350 degrees 45 minutes until soft.
Cut broccoli into chunks and toss with olive oil and salt and pepper. Roast at 350 about 20-25 minutes
Shred and rested the kale. In a skillet drizzle olive oil. Place kale in skillet and season with salt and pepper and a few dashes hot sauce. Cook about 5 minutes until wilted.
Heat up curry chickpeas and slice watermelon radish.
in a bowl assemble all ingredients | Quinoa, kale, broccoli, halved roasted sweet potato, chick peas, water melon radish. Drizzle all with green goddess dressing.
