The Best Penne Alla Vodka

My Dad recently made this Pasta Alla Vodka when he was down here and sent some leftover for my kids and they have been raving about it ever since. I decided to make it for dinner for them on Valentine’s Day and it was a huge hit yet again! This is super easy and let me tell you highly delicious. Some of the best pasta I have ever made! Recipe below!

PENNE ALLA VODKA

1 lb penne pasta
1 lb hot Italian Sausage
1 pack Proscuitto or Panchetta
1 onion diced
6 cloves garlic
1 tablespoon oregano
1 teaspoon red pepper flakes
1 teaspoon salt (add more if needed)
1 teaspoon pepper
1 small can tomato paste
2 cups heavy cream
2 – 28 oz cans crushed tomatoes
1 cup vodka
1/2 cup Parmesan
Fresh basil and more Parmesan for topping.

In a skillet cook the diced prosciutto. Once cooked about 5 minutes remove from pan. In that same pan add in Italian Sausage and chopped onion. Cook until the meat is browned. Add in garlic and cooked prosciutto. Add tomato paste and 2 cans crushed tomatoes. Stir well. Season with salt, pepper, oregano, and red pepper flakes.
Add in vodka and simmer 30 minutes.
Meanwhile boil and cook your noodles. Drain and set aside
Add in heavy cream and let simmer another 20ish minutes. Pour in drained pasta and stir all well to combine. Add Parmesan cheese and top with fresh basil and more cheese.
