This is a salad I have been making for years. It is so easy and flavorful! This is my updated version!
TUSCAN KALE SALAD
1 head kale de-stemmed and shredded
1/3 cup olive oil
juice of 2 lemons
1 garlic clove minced
1 tablespoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup panko breadcrumbs
1/3 cup Parmesan Cheese
Place shredded kale in a bowl and lightly massaged with a little olive oil. I like to toast the panko breadcrumbs in a skillet with spicy olive oil for about 5 minutes but that step is not necessary I have made this without toasting them as well. Add panko breadcrumbs and Parmesan cheese to massaged kale. In a dressing shaker add olive oil, lemon juice, garlic, red pepper, salt and pepper and whisk. Pour dressing over salad and mix well.
