Cauliflower + White Bean Salad with Lemon Vinaigrette

My love for a good salad runs deep. Sometimes when I can’t sleep at night (which is often) I dream up recipes i want to make. I kept envisioning some sort of a cauliflower salad and this is what came to fruition. I made this to have on hand for lunches this week and loved it. The combination of the crunchy cauliflower, salty capers, creamy feta cheese, sun-dried tomatoes and white beans is out of this world. It is all tossed with a lemon vinaigrette so it is a nice light and healthy salad. This can be made ahead of time and saves well in the fridge for several days. Enjoy!

C A U L I F L O W E R + W H I T E B E A N S A L A D

1 head cauliflower, chopped into bite size pieces

1 can cannelini beans drained and rinsed

1/2 cup sun dried tomatoes

2 small heads endive lettuce

4 oz crumbled feta cheese

3 tablespoons capers

chopped parsley

1/4 cup olive oil

2 tablespoons red wine vinaigrette

juice of 2 lemons

salt and pepper

In a bowl combine the cauliflower, feta, endive, capers, parsley, sun-dried tomatoes and white beans.

In a jar combine the olive oil, lemon juice, red wine vinaigrette, and salt and pepper. Shake to toss all together. I love this dressing shaker!

Drizzle dressing over the salad and toss all together.
