
Meet my new favorite recipe that could not easier Salsa Verde Chicken. I have made this twice in the past week. It is so simple and the whole family loved it. Sterling asked me if I could make this every week! You can serve the chicken on a salad, over rice, as taco or burrito- so many options.
The beauty of this is the crockpot does all the work. Fun fact I got our crockpot as a wedding gift and I rarely use it. Like I have maybe used it 10 times in 14 years but this is inspiring me to use it more often. This chicken was so tender and full of flavor.

Two items I recommend that we served our chicken with are Right Rice and and this Avocado Hot Sauce.


S A L S A V E R D E C H I C K E N B O W L S
4 chicken breasts
1 small onion diced
3 cloves garlic
1.5 jars salsa verde (nay brand works)
shredded cheddar cheese
lettuce
Pico de Gallo
Guacamole
In a skillet saute the diced onion and garlic in olive oil. Cook about 5-7 minutes. Then spread this mixture on the bottom of the crockpot. Nestle the raw chicken breasts in this mixture. Season the chicken breasts with salt and pepper then pour the salsa verde over top. Cook on low for 8 hours or you can do high for 4 hours- I have only done the 8 hours but the 4 would work.
Once cooked shred with two forks. You can let the chicken sit on warm if you aren’t ready to serve yet.
We made bowls and layered Right Rice, Refried Black Beans, The Salsa Verde chicken, lettuce, pico, guacamole and hot sauce! Enjoy
