Asian Noodle Salad + 7 Kitchen Gadgets Under $30 I Love

I always love a noodle salad.  This one is filled with lots of yummy veggies and has a delicious almond butter dressing on it.  I made this for lunch but if you wanted a heartier meal I would add some grilled chicken or shrimp to the top.  it will save in the fridge for a few days.  Enjoy!

A S I A N  N O O D L E  S A L A D 

Whole wheat spaghetti noodles

2 carrots, shredded or sliced with veggie peeler

2 zucchini, spiralized

5 green onions sliced

1 can chick peas, rinsed and drained

sesame seeds for garnish

DRESSING

1/4 cup almond butter

1 tablespoon fresh grated ginger

1 garlic clove minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon lime juice

red pepper flakes

1 tablespoon maple syrup

Cook spaghetti according to package.  I cook an entire package but only used about half the noodles for the salad.  Drain noodles and set aside in a large bowl.  In in carrots, chickpeas, spiralized zucchini, and green onions.  Toss all together.

Whisk dressing in a separate bowl and then toss salad with dressing.  Top with sesame seeds.  This is great cold or room temperature.

I often get questions about favorite kitchen tools so I wanted to share a few including the spiralizer I used for this recipe.  I just recently bought this spiralzer and I am obsessed.  It has 4 blades so you can spiralize large or small noodles, slice things like a mandolin, or shred.  You can also use it as a juicer.  and did I mention its under $25??  Worth every penny.

Garlic Press and Peeler Set

I use my garlic press almost daily.  It makes finely chopping garlic so easy and its dishwasher safe, so easy clean up.  If you don’t have a garlic peeler you need one.  You place the garlic in the tube roll around a bit with your hands and then the skin comes right off.

Stainless Steel Soap Pump

This is great for when you are cooking and especially handling raw meat and don’t want to touch anything.  I love this hand soap for refills.

Meal Prep Containers

These are awesome for meal prep or lunch on the go.  I love the 2 part ones but they also come with a 3 part option as well.
