If you are looking for an appetizer idea for the Super Bowl I have you covered. These cheesy broccoli bites are a quasi healthy option and a great sneaky way to get your kids to eat veggies. While I was cooking these Frances Moon came in the kitchen and said “what smells so good??” She and Sterling both devoured these- although I will say they both like and eat broccoli regularly. These are baked + crunchy + cheesy and so yummy. I served ours with Tessamae’s Ranch I like that it has no sugar and it has a great herby flavor but any Ranch would work well. 2 heads Broccoli chopped into bite size pieces
1 cup seasoned Panko breadcrumbs
1 cup finely shredded sharp cheddar cheese (I recommend shredding your own and using Cracker Barrel)
1/2 cup grated Parmesan cheese
1 teaspoon garlic salt
1/4 teaspoon cayenne
3 eggs
1 tablespoon milk
Ranch or Green Goddess dressing for serving
In a bowl mix together panko breadcrumbs, shredded sharp cheddar, grated Parmesan, garlic salt and cayenne. mix well.
In a second bowl whisk together eggs and milk.
Dip each broccoli floret in the egg mixture first and then in the Panko/Cheese mixture. Press and roll the broccoli to ensure the cheese mixture sticks to each piece. Place each piece on a lined and greased baking sheet.
Bake at 400 degrees 20 minutes until crispy.
