
The weather has been chilly here and I am loving it. It made me want to make a big pot of homemade soup. This creamy tomato soup is a family favorite. I have made it so many times I have the recipe memorized. It is just a few simple ingredients and so delicious. It comes together in just about 30 minutes. The toppings of white cheddar cheese, dill, and red pepper flakes are the perfect complement to the tomato soup. We love to serve ours with a grilled cheese. Enjoy!

1 small white onion diced
1 bunch green onions
3 tablespoons butter
1 tablespoon tomato paste
4 13 oz boxes crushed tomatoes
1.5 cups water
1.5 cups heavy cream
1/4 cup chopped fresh dill
Shredded Cheddar Cheese
In a large pot melt the butter add in diced onions and green onions. Sauté about 7-10 minuets. Add in 1 tablespoon tomato paste. Cook about 1 minute. Add in crushed tomatoes, water, and heavy cream. Simmer about 30 minutes. Serve with fresh shredded sharp cheddar cheese, dill and red pepper.
