Greek Salad Cucumber Boats
New snack I’m LOVING | Greek Salad Cucumber Boats. Basically Deconstructed Greek Salad pilled high over a crispy baby cucumber. Add a layer of your favorite hummus as the base, top with veggies and don’t forget freshly crumbled feta cheese over top. This is a crispy savory snack that is healthy, filling and full of flavor!
Ingredients
Persian Cucumbers halved
Hummus
Sliced Cherry Tomatoes
Sliced green olives
Sliced Kalamata olives
Capers
Crumbled Feta Cheese
Parsley
Drizzle of Olive Oil
Instructions
Slice the Persian Cucumbers in halve and place on a platter. Spread a layer of hummus. Layer cherry tomatoes, green olives, Kalamata olives and capers. Crumble fresh feta cheese over top. Sprinkle with Parsley and Drizzle with Olive Oil!
