I love meal prepping and having healthy salads on hand for my lunches during the week. I love the precooked lentils at Trader they are perfect for salads like this! For this lentil salad I added in all my favorite Mediterranean ingredients and made a light vinaigrette. This salad is so delicious and lentils are high in protein so this is a salad that will keep you full! Enjoy!
M E D I T E R R A N E A N L E N T I L S A L A D
1 box precooked lentils
1/2 cup cherry tomatoes halved
2 baby cucumbers diced
1/4 cup red onion diced
1/2 cup feta cheese
1/2 cup kalamata olives
1 small orange bell pepper diced
1/2 cup marinated artichoke hearts
2 tablespoons parsley
D R E S S I N G
1/3 cup oil oil
juice of 2 lemons
1 tablespoon dijon
1 tablespoon apple cider vinegar
1 garlic clove minced
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper
Shake all dressing ingredients together and drizzle over salad ingredients. Toss all together and enjoy!
