I LOVE pasta salad, it is one of my favorite meals. I grew up with my Mom making this pasta salad and we all love it. It could not be easier to make and you could add in any veggies or meat you like! Dressing wise I like to use the Good Seasonings Italian dressing. It comes in a powder packet and you add in your own oil and vinegar. My other favorite is the Primal Kitchen Italian or Greek Vinaigrette. This would be perfect for Memorial Day weekend! Enjoy!
M Y F A V O R I T E P A S T A S A L A D
1 box tri color pasta
1 small jar sun dried tomatoes
handful pinenuts
1 green bell pepper sliced
pepperonis sliced into strips
sliced green olives
Parmesan Cheese shredded
2 oz feta cheese
1/2 red onion diced
Italian Dressing (I like the Good Seasonings packet you mix yourself or Primal Kitchen)
Cook pasta according to box. Drain and let cool slightly.
Place the cooled pasta in a bowl, add in sun-dried tomatoes, green bell pepper, red onion, green olives, pepperoni, pine nuts, feta cheese and Parmesan Cheese. Season with salt and pepper. Toss with dressing. I find this is best room temperature.
