We grew up eating Squash Casserole all the time in the Summer, we had a recipe called Posh Squash Casserole my grandmother and mom would make. This is pretty similar to it just with a few changes. They would always dice their squash and I decided to slice mine. I prefer it this way, plus it looks prettier too! I added in more cheese and sour cream and I think it is the perfect recipe now! This is a great way to use up end of Summer squash! This is loaded with cheese so not diet friendly but a very yummy Southern staple side dish!
S Q U A S H G R A T I N
4 squash and or zucchini (I like to do 2 of each) sliced thinly
1 white onion sliced thinly
1 egg
1/2 cup sour cream
1/2 cup mayo
1 tablespoon hot sauce
salt and pepper
1.5 cups grated cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup grated mozzarella
In a large bowl add the squash, zucchini, and onion. Lightly toss all together. Add in the egg, mayo, sour cream, hot sauce, salt and pepper and toss all together. Stir in cheeses. Pour the mixture into a baking dish and bake at 350 degrees an hour. Remove and let sit before serving.
Do you cook it covered at all?
You can cook it covered half of the time if you want!
