
I love Summer Produce so much and this is such a great way to use it up! I made this corn salad last weekend honestly as a means to clean out my fridge and use up some items before they went bad and it turned out fantastic. Everyone was raving about it. It is really simple to make and just so fresh and vibrant. The perfect Summer side dish. Recipe below!

S U M M E R C O R N S A L A D
2 cups arugula
5 ears of corn
1 cup halved cherry tomatoes
1 bunch green onions diced
1 green bell pepper diced
1 cup basil chopped finely
2 tablespoons chives
5-6 oz crumbled feta
1/2 cup olive oil
Juice of 3 limes
1 teaspoon salt
1 teaspoon pepper
Bring water to a boil and place corn in boiling water for 4-5 mins no longer or it won’t be crisp.
Place the arugula in a bowl, add the fresh cooked corn, cherry tomatoes, green onions, green bell pepper, fresh herbs and crumbled feta cheese.
Whisk together the olive oil, lime juice and salt and pepper. Pour dressing over salad and toss well! Season with more salt and pepper if needed!
