Thai Chicken Lettuce Wraps + Last Night’s Outfit

I had been craving Thai food lately but wanted to make something on the healthier side, enter these lettuce wraps.   I can’t say enough great things about these Thai Chicken Lettuce Wraps.  First of all they are super easy to make, this recipe can be made in under 30 minutes.  Secondly, the flavors are so good and it is a super healthy meal.  Thirdly, my kids ate them and really liked them and I consider that in itself a winning meal.  I will say I served their chicken on a soft taco shell I knew they would boycott the lettuce.  The best part was they both exclaimed how gross dinner looked and how it was gonna be nasty when they saw me cooking,  then I made them taste it and they both loved it.  Gotta love when you can tell you kids ” I told you so.”  I promise you will love these easy lettuce wraps!  Enjoy!

T H A I  C H I C K E N  L E T T U C E  W R A P S

1 pound ground chicken

1 tablespoon minced garlic

1 tablespoon minced ginger

1 tablespoon olive oil

1 red bell pepper, diced

5 green onions, sliced green and white parts

1 cup shredded carrots

1/4 cup cilantro

1/2 cup chopped peanuts

1/2 teaspoon sriracha

iceberg lettuce

SAUCE

3 tablespoons soy sauce

3 tablespoons fish sauce

2.5 tablespoons brown sugar

2 tablespoons lime juice

1/2 teaspoon sesame oil

2 teaspoons cornstarch

 

In a bowl whisk together all ingredients for the sauce.

In a large skillet heat the olive oil and add in garlic, ginger, green onions and red bell pepper.  Cook for 2-3 minutes.  Then add in chicken.  Cook chicken until it is done and no longer pink.  Add in sauce and carrots.  Simmer for about 5-10 minutes on low heat.    Add in sriracha and cilantro right before serving.   Scoop chicken into iceberg lettuce pieces.  Top with chopped peanuts and drizzle with hot sauce if desired.

I also wanted to share my outfit from last night because my blouse is now on sale and only a few sizes left.  It is such a great boho blouse.  I love it paired with jean shorts now and jeans once it gets colder here.  My earrings are also on sale.  They look like they would be heavy but they are super lightweight.  I wore them all night and they didn’t hurt my ears at all.   I am wearing a small in the blouse.
