Broccolini Tart + Easter Brunch Ideas

I had several requests to share some Easter Brunch ideas. I love the idea of a tart at brunch. I recently made this one and it was so yummy. The base is a ricotta mixture and it pairs so well with the broccolini and the feta adds the perfect salty finish. This is great served warm or room temperature.

Below this recipe I am also sharing some other Easter brunch ideas.

BROCCOLINI TART

1 sheet puff pastry thawed (this can be found in the freezer section)

2 heads broccolini

8oz ricotta

6 tablespoons pesto

1 teaspoon lemon zest

4 oz feta cheese

Roll out the puff pastry dough to an even rectangle. Score a 1 inch border around it with a knife. In a bowl combine the ricotta, pesto, a teaspoon of lemon zest and salt and pepper. Spread this mixture over the puff pastry. Take a brush and brush the scored edge with olive oil. Cut the broccolini into similar size pieces and toss with olive oil. Lay the broccolini on the pastry tart I alternated laying it each way. Sprinkle with salt and pepper. Crumble the feta over top. Bake at 350 degrees about 20-25 minutes until pastry is lightly browned. Remove from oven and cut into squares.

    The broccolini tart was delicious! It was easy enough that my 7 yr old did most of it with minimal assistance. We had it with grilled halibut…such a yummy spring meal!
